As needed, Large Tortilla Chips
1 oz, Refried Black Beans (see recipe)
1 oz, Bacio White Cheddar Blend
1 oz, Carne Asada (see recipe)
As needed, Chopped Cilantro
As needed. Pickled Onions
As needed, Pickled Jalapeno
As needed, Cotija
As needed, Salsa Verde (see recipe)

Refried Black Beans Ingredients
8 oz, Cooked Black Beans
8 oz, Bacon, Mince
1 ea, Yellow Onion, Minced
2 ea, Garlic Cloves, Minced
TT, Salt & Pepper

Salsa Verde
1#, tomatillos (husks removed)
1 ea, jalapeño (or more for spice)
1/4 cup, chopped onion
1/4 cup, fresh cilantro
1 ea, garlic clove
Salt to taste
Juice of 1 lime (optional)

Instructions

Nachos

  1. Take a large tortilla chip and smear roughly 1 oz of refried black been evenly on the chip
  2. Place 1 oz of thinly sliced Carne Asada on the chip
  3. Cover Carne Asada with shredded cheese.
  4. Bake until cheese is perfectly melted.
  5. Garnish with cilantro, salsa verde, pickled onions, pickled jalapenos, and cotija.

Refried Black Beans Ingredients

  1. Fry bacon until crispy.
  2. Add onions, garlic, and beans to oil and fry beans until they start breaking down.
  3. Mash all ingredients until a mashed potato consistency is achieved.

Salsa Verde

  1. Boil tomatillos and jalapeño in water for 5 minutes, until soft.
  2. Blend with onion, cilantro, garlic, and salt (add lime juice if using).
  3. Taste and adjust salt or lime as needed.
