That’s part of the Bacio difference—and part of what makes our recipe so special. While the exact ratio is a closely guarded secret, every batch of Bacio is crafted with a kiss of buffalo milk™—the signature touch that sets us apart and keeps your customers coming back for more.

According to FDA guidelines, mozzarella must be made exclusively from one type of milk—typically cow’s milk. But at Bacio, we do things differently. We blend premium cow’s milk with a kiss of buffalo milk. It’s not a traditional mozzarella. It’s exceptional. It’s made specifically for pizza perfection.

No, Bacio is different than mozzarella di bufala or fresh buffalo mozzarella. Our cheese is more closely related to traditional mozzarella that is used on pizzas and other Italian dishes.

Yes and no. Our cheese is made using the same traditional pasta filata (stretched curd) process used to make standard mozzarella. However, we use a blend of high-quality milks—including buffalo milk—which falls outside the definition set by the U.S. Code of Federal Regulations (CFR) for mozzarella cheese. According to the CFR, only one type of milk may be used to produce mozzarella, so while our cheese is crafted in the same way and shares the same texture and flavor profile, it technically cannot be labeled as mozzarella.

That said, we use only premium ingredients and maintain the highest production standards, resulting in a cheese that’s rich, flavorful, and of exceptional quality—whether or not it meets the regulatory definition of mozzarella.

Bacio is the Italian word for kiss, which is an homage to the signature Kiss of Buffalo Milk that sets our pizza cheese apart from any other.

Yes. The ingredients we use meet the U.S. definition for “gluten-free” as outlined in FDA regulation 21 CFR 101.91 for products manufactured after January 1, 2015.

Apart from the milk used, no other ingredients of animal origin are included in our products. The enzyme we use for cheesemaking is a microbial fermentation ingredient, approved by the FDA, and is not derived from animal sources like beef or pork rennet.

  4. Every Purchase Counts
    Whether it’s a single case or a full truckload, every pound of Bacio cheese qualifies. No exclusions.
  5. Biannual Bonus Support
    Twice a year, you’ll receive additional credits for the Bacio Marketing Store—stock up on pizza bags, cutters, check presenters, or refresh your menu materials.

At Bacio, this isn’t just a promotion—it’s part of how we support your long-term success. We believe in rewarding your loyalty, with a program that works as hard as you do.

Once you are enrolled, you qualify to earn up to $.18 per pound of Bacio cheese purchased. Tiers are based off of a rolling 5 week cumulative purchase period.

Here’s how it works:

  1. Gold Tier
    Earn $0.06 when you buy up to 1,624 lbs of cheese or 325lbs per week.
  2. Platinum Tier
    Earn $0.12 when you buy between 1,625 – 3,249 lbs of cheese or between 326 – 649 lbs per week.
  3. Diamond Tier
    Earn $0.18 when you buy over 3,250 lbs of cheese or over 650 bs per week.

It’s not uncommon for your Gold Club tier to change from time to time—your rewards are based on your total Bacio purchases over a rolling 5-week period. That means as your buying patterns shift, so can your tier.

You might be in the Gold tier one week and move up to Platinum the next—it depends on your last five weeks of purchases.

No need to track it yourself. Our system automatically calculates your tier and loads your combined rewards onto a monthly prepaid card—physical or digital.

Whether you choose a physical or digital card, your Bacio Gold Club rewards are sent out once a month, based on your purchases from the previous month. Rewards are only sent when the balance reaches $25, with funds rolling over until that amount is met.

For example, rewards earned in February will arrive by the end of March.

  • Digital cards arrive faster via email.
  • Physical cards are sent through USPS and may take a little longer to arrive.

Please note: While we process the cards on time, we are not responsible for shipping delays with USPS or incorrect mailing addresses.

No. Once the value on the card has been used, it can be discarded or removed from your digital wallet.

The physical pre-paid reward card will expire in 12 months from time of issue. The digital card will expire in 6 months from time of issue. The expiration date is marked on each card. Please use by the expiration date.

Each month, your Bacio Gold Club reward will be sent to the mailing address or email you provided during enrollment:

  • Physical cards are delivered via USPS to the mailing address on file.
  • Digital cards are sent via email to the address you submitted when signing up.

For your security, both physical and digital reward cards must be activated before use. Instructions are provided with each card to guide you through the process:

  • Physical cards include activation steps on a sticker attached to the card and printed inside the envelope.
  • Digital cards will include activation instructions in the email, with a step-by-step guide for activating online.

The Bacio Gold Club Store is an online shop where you can spend rewards you earn by buying Bacio cheese. It’s part of the Gold Club program. Think of it like a special store just for your business, filled with useful marketing tools and pizza supplies that help you grow your restaurant.

How does it work?

  • Twice a year—in January and July—you get credits added to your account based on your cheese purchases.
  • You log in with a username and password to access the store.
  • You can see how many credits you have and use them to “buy” items like custom menus, pizza bags, cutters, hats, and t-shirts.
  • If you want to get more than your available credits, you can pay the difference with a credit card.
  • Most items ship for free directly to your restaurant.

Why use it?

It’s an easy way to get useful marketing materials and gear without extra cost—just by continuing to use Bacio cheese. It helps you promote your business and save money at the same time.

Visit BacioGoldClubStore.com anytime to redeem your marketing rewards. New credits are added twice a year—in January and July. Credits do not roll over, so be sure to use them before the next update.
