Al Pastor Sopes are a fiery fusion of street food tradition and pizza-inspired indulgence. Built on crisp, golden masa cakes, each mini “sope” is layered with savory marinated pork al pastor, melty Bacio® Whole Milk Cheese, and finished with a tangy drizzle of creamy Valentina sauce. Ingredients

Sopes
2 ea, Masa Sopes
4 oz, Al Pastor (see recipe)
4 oz, Bacio WM Cheese
1 tsp, Minced Red Onion
1 tsp, Chopped Cilantro
1 Tbsp, Creamy Valentina (see recipe)

Al Pastor
3–4 lbs, boneless pork shoulder, sliced thin
3 oz, Achiote paste
½ cup, Pineapple juice
¼ cup, White vinegar
3 ea, Garlic cloves
1 Tbsp, Dried Oregano
1 Tbsp, Ground Cumin
1 Tbsp, Smoked Paprika
1 tsp, Salt
½ tsp, Black Pepper

Creamy Valentina Sauce
1 cup, Mexican crema or sour cream
¼ cup, Valentina hot sauce
TT, Salt

Instructions

Sopes

  1. Top the sopes with Al Pastor Pork and Bacio
  2. Bake the sopes until cheese is fully melted and blistered
  3. Top the sopes with a drizzle of Creamy Valentina
  4. Finish with red onions and cilantro

Al Pastor

  1. Blend all marinade ingredients until smooth.
  2. Marinate sliced pork overnight in the marinade.
  3. Roast or grill pork until caramelized and fully cooked.
    Cool and rough chop or slice for pizza topping.

Creamy Valentina Sauce

  1. Combine all ingredients in a bowl and mix until fully incorporated. Transfer to a squeeze bottle for post-bake garnish.
